Vegan No Bake Brownie Bites! Comes together in 1 bowl and under 10 minutes, and the flavor is reminiscent of a brownie. Perfect for a quick snack when you’re on the go!
Ingredients
1 cup gluten free rolled oats
1 cup gluten free oat flour
2 tablespoons flax meal or seeds (optional)
2 tablespoons carob powder (sub cocoa powder)
¼ cup carob chips or dairy free dark chocolate chips (optional)
⅓ cup sunflower seed butter (or nut butter of choice)
2 tablespoons apple juice syrup (sub agave nectar or honey if not vegan)
¼ cup, + 2 tablespoons filtered water
¼ teaspoon salt
1 teaspoon vanilla extract
Instructions
Combine 1 cup gluten free oats, 1 cup gluten free oat flour, 2 tablespoons flax meal or seeds (if using), 2 tablespoons carob powder (sub cocoa powder), and ¼ cup carob or dairy free dark chocolate chips (if using) in a large mixing bowl. Mix until combined.
Add ⅓ cup sunflower seed butter (or nut butter of choice), 2 tablespoons apple juice syrup (sub agave nectar or honey if not vegan), ¼ cup + 2 tablespoons filtered water, ¼ teaspoon salt, and 1 teaspoon vanilla extract.
Mix until combined.
Roll into 13-16 bite size balls, slightly smaller than a golf ball.

Notes
• Leftovers can be stored in the fridge for up to 1 week, longer if kept in the freezer. • If you don’t have gluten free oat flour, you can make your own by grinding the oats in a blender or food processor.
