Vegan No Bake Brownie Bites

Vegan No Bake Brownie Bites! Comes together in 1 bowl and under 10 minutes, and the flavor is reminiscent of a brownie. Perfect for a quick snack when you’re on the go!
Ingredients
  • 1 cup gluten free rolled oats
  • 1 cup gluten free oat flour
  • 2 tablespoons flax meal or seeds (optional)
  • 2 tablespoons carob powder (sub cocoa powder)
  • ¼ cup carob chips or dairy free dark chocolate chips (optional)
  • ⅓ cup sunflower seed butter (or nut butter of choice)
  • 2 tablespoons apple juice syrup (sub agave nectar or honey if not vegan)
  • ¼ cup, + 2 tablespoons filtered water
  • ¼ teaspoon salt
  • 1 teaspoon vanilla extract
Instructions
  1. Combine 1 cup gluten free oats, 1 cup gluten free oat flour, 2 tablespoons flax meal or seeds (if using), 2 tablespoons carob powder (sub cocoa powder), and ¼ cup carob or dairy free dark chocolate chips (if using) in a large mixing bowl. Mix until combined.
  2. Add ⅓ cup sunflower seed butter (or nut butter of choice), 2 tablespoons apple juice syrup (sub agave nectar or honey if not vegan), ¼ cup + 2 tablespoons filtered water, ¼ teaspoon salt, and 1 teaspoon vanilla extract.
  3. Mix until combined.
  4. Roll into 13-16 bite size balls, slightly smaller than a golf ball.
  5. Enjoy!
Notes
• Leftovers can be stored in the fridge for up to 1 week, longer if kept in the freezer.
• If you don’t have gluten free oat flour, you can make your own by grinding the oats in a blender or food processor.
